The winery was established as a cooperative in 1932 and they source fruit from over 300 trusted growers in the area. The focus is always on quality and being ecologically aware. They have made a name for themselves highlighting local varieties and the differences between the multitude of tiny vineyard sites. As members of Sustainable Wines of Great Britain they follow methods of vineyard management that work in harmony with nature rather than rely on heavy spraying
Each wine is separately matured in its own solera for 12 years before blending and an additional three years ageing
The wine is then matured in the same oak for 12 months and aged in the bottle for an additional 8 months before release
